Mực xào dứa

Nguyên liệu:
Mực tươi: 0,500 kg
Gừng tươi: 0,020 kg
Dừa: 0,500 kg
Tỏi khô: 0,010 kg
Mỡ nước(dầu ăn): 0,050 kg
Bột đao: 0,010 kg
Hành tươi, rau mùi, nước mắm, muối, ớt, hạt tiêu.

Cách làm:
- Mực bóc bỏ màng đen, mai, ruột rửa sạch, để ráo. Đặt mực lên thớt khía dọc, ngang song song cách nhau nửa phân rồi thái miếng vừa ăn, ướp nước mắm, muối, hạt tiêu và gừng giã nhỏ, để 10 – 15 phút cho ngấm.
- Dứa gọt vỏ, bỏ mắt, bổ 4 – 6, bỏ lõi, thái miếng ngang vừa ăn.
- Tỏi bóc vỏ, đập giập. Hành nhặt rửa sạch, thái dài 2 cm, củ dọc để riêng.
- Cho nửa mỡ (dầu ăn) vào chảo đun nóng già, bỏ tỏi vào phi thơm, cho mực vào, đun to lửa, đảo nhanh tay, khi mực vừa chín tới xúc ra. Cho nốt số mỡ (dầu ăn) còn lại vào chảo, phi thơm hành củ, trút dứa vào đảo đều, nêm ít nước mắm, muối. Khi dứa ngấm mắm muối, cho một thìa nước vào bột đao quấy đều, đổ từ từ vào (vừa đổ vừa đảo đều tay). Bột chín cho mực vào đảo lẫn, nêm lại mắm muối vừa ăn, bỏ dọc hành, đảo đều, xúc ra đĩa, rắc hạt tiêu, rau mùi lên trên, ăn nóng.
Yêu cầu thành phẩm:
Mực chín giòn, dứa không nhũn, vị ngọt hơi chua vừa ăn, không tanh, thơm mùi hạt tiêu.
